This Sausage & Pepper Tater Tot Egg Casserole is the perfect make-ahead breakfast to serve company (like for Father’s Day, wink wink) or to feed your own hungry tribe at home. It’s naturally gluten free which means the whole family can indulge!
Last week we said goodbye to the only elementary school my kids have ever known. My oldest daughter finished 5th grade and will be off to middle school in a totally different county with not a single familiar face. My other 3 school-age kids said goodbye to teachers that have taught multiple Dangerfield kids and have become family friends. All of my kids have had the same kindergarten teacher and think of her as a friend. She had one more little Dangerfield to go to complete the family. Ugh I have been dreading the last day of elementary school for my oldest daughter’s sake, not knowing that it would be the last day for ALL my kids the same day. What an emotional day it was. After volunteering as room mom every year for the past 6 years and working so closely with these teachers it’s hard to walk away and start over. As my oldest daughter took her final walk through the halls of the school with her fellow 5th grade students, she cried… which made me break into the ugly cry as she passed me in the hall. Every student and teacher from the school stood outside of their classroom and high-fived them as they walked by. We have been so blessed to be part of the #1 school in our county with such a stellar staff of teachers. It makes a world of difference knowing your child’s teacher sincerely has their best interest at heart. We look forward to making our mark on a new school, making new friends, meeting new teachers and creating new memories in our new home and town. Stay tuned for all our adventures!
I made this recipe for Mother’s Day, but after I made it I actually thought it would be more appropriate for Father’s Day being that it’s so hearty, a little spicy and full of meat. All things dad’s like, right? Don’t get me wrong, my mom LOVED this dish, but I probably should have gone with something prettier like a quiche if I could do it again. This recipe can be prepared the night before and baked the next morning which makes it perfect for the morning rush. It also saves really well as leftovers.
Ingredients
- 3/4 bag Mini Tater Tots, baked until golden brown
- 1 lb Jimmy Dean Hot Sausage
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1/2 sweet onion, chopped
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 2 C cheddar cheese, shredded
- 2 C mozzarella cheese, shredded
- 8 eggs
- 2 C milk
Instructions
- Bake 3/4 bag of mini tater tots until golden brown and set aside.
- Saute sausage, peppers and onion together until sausage is cooked through and peppers are tender.
- In separate bowl, beat eggs and add seasonings.
- In a large bowl, gently toss tater tots with sausage and peppers, eggs and cheese. Pour into greased casserole dish and cover with plastic wrap. Place in refrigerator overnight. In the morning, bake uncovered at 350 degrees for 45 minutes or up to 1 hour. Serve hot.
