With Spring approaching, a Carrot Cake Cookie is just what you need to get into the mood. With only 4 ingredients, these cookies whip up fast and will get eaten even faster. They are seriously dangerous.
This recipe takes me allllll the way back to my college days in Gainesville, Florida. I was living with 6 other girls in a run-down apartment, far away from home, no money, dancing every weekend, kissing
a new boy every week a select few special guys, meeting some of the best people this Earth has to offer and forming life-long friendships with them while feeling high on life and grateful for the opportunity I had to experience the ‘college life’ with so many exceptional people.
One of those life-long friendships I made while there was with a roommate of mine named Happy. Yes. Her name is Happy like one of the seven dwarfs and she lives up to her name every day. She is truly just a genuinely happy person. Happy’s boyfriend, Ross, surprised all 7 of us girls one day with these very cookies. I was in love! Not with him, but with these cookies!! You’ve heard of the freshman 15? Well, these cookies were the culprit of me gaining those 15 pounds. I’m not even exaggerating. I never knew I could grow such a large booty. Ha! These cookies are seriously so good! Soft and chewy with just the right amount of spice and cream cheese frosting that melts on top of the warm cookie. Ooooo they’re so good!
