If you think this is an “adult” grilled cheese, think again! My kids call this Fancy Grilled Cheese and they love love LOVE it! It’s messy, gooey, hot and cheesy. No manners allowed while eating this deliciousness, it’s so good you’ll be licking your fingers and your plate clean!
My life would not be the same had I never tried this recipe. It’s the truth. The joy and excitement I feel when I am eating this messy sandwich is exhilarating. Honestly, my kids feel the same way. If you could just have audio of us eating this you would hear a lot of crunching, lip smacking, finger licking and moaning going on. Not a whole lot of talking. Talking delays the experience of eating this gooey creation! My older ones eat 2 sandwiches each. It truly is amazing!!
Ingredients
- 1 C whole milk ricotta
- 1 T olive oil
- 2 cloves minced garlic
- 2 T chopped fresh basil
- 1 tsp dried oregano
- 1/2 tsp Kosher salt
- fresh ground pepper to taste
- 1/2 C shredded fresh Parmesan cheese (buy a block, don't use grated)
- Mozzarella cheese slices
- sliced Italian white bread
- butter for spreading
Instructions
- Mix all ingredients, except bread and mozzarella cheese, in bowl.
- Gently butter bread on one side or melt butter in pan or on griddle and place bread on top.
- Immediately place mozzarella cheese on one piece of bread being sure to cover whole slice. Spread cheese mixture on other slice of bread. When bread is golden brown, flip mozzarella slice on top of cheesy slice and serve. If you are a dipper, serve with a side of warm marinara sauce for dipping.

Oh. My. Gosh. This was so good it’s ridiculous. Seriously. I posted a link to this recipe on Facebook with the caption, “Everyone needs to try this recipe ASAP.” It’s no joke. I made it while Jared was out of town and made it again the next week when he was back home just so that he could try it. Of course he LOVED it too and after dinner checked a couple of times to make sure we had put the leftovers in the fridge so that he could eat it again the next day for lunch. To die for!! (P.S. The first time I made it, I didn’t even notice that I left out the ricotta on accident!!! So just FYI, it is crazy good without it too)!!
