White Chicken Chili
Ingredients
- 1 quart chicken broth or GF chicken broth
- 1 rotisserie chicken, shredded
- 2 cans Great Northern beans (rinsed and drained)
- 1 can Pinto beans (rinsed and drained)
- 2 cans chopped green chilies
- 1 C heavy cream
- 1 C sour cream
- 1 tsp dried oregano
- 1 1/2 tsp cumin
- 1/2 tsp salt
- 1 1/2 tsp garlic powder
- 1/4 C cold water mixed with 3 T corn starch
- shredded Monteray Jack or Pepper Jack cheese
- chopped cilantro
Garnish
Instructions
- Combine all ingredients (except water with corn starch and garnish) in crock pot. Cook on low for 4-5 hours. If cooking on stove top, combine ingredients and let simmer for at least 30 minutes before serving.
- If you'd like soup to be thicker, add 1/4 C cold water mixed with 3T corn starch to hot soup. Stir and continue to cook for 5 minutes. Ingredients will thicken into more chili-like consistency.
- Top with shredded Monterey Jack or Pepper Jack cheese and chopped cilantro. Serve next to corn bread.

I made this last night and my 9 year old daughter asked for seconds!! She never ask for seconds unless its sweet. Great Chili definitely one of our favorites.

This was AMAZING!!! Oh my goodness, the entire time we were eating it my husband and I kept “saying Mmmmm!” or “This is SO GOOD!!!” or “Oh my gosh this is good!!” I’m totally serious. My husband even said, “This makes me not even want to go out to eat anymore when I can eat food like this at home.” I immediately sent the recipe to a friend who I swap recipes with and she made it today and loved it as well. This definitely goes straight to the top of my list of favorite recipes!
