This Thai Peanut Pasta Salad can fit into your meal plan as a salad before an entrée, a light refreshing lunch or as an appetizer for a gathering. It’s served cold which means you can prepare it ahead of time. I love recipes that make me look good!
This past weekend we took the family to Slide The City, a traveling 1000 foot 3-lane slip n slide that promised a good time and unlimited slides. Ummm, well… not so much. After waiting in line an hour and a half just to get our tubes to slide on, we had to wait another 2 hours in line just to slide. With 2 other families with us and their little ones, lets just say we were the minority. If you weren’t 18-25 with a beer in your hand, booty dancing to the heart-pounding music with your tattoos revealing… then you were the minority. Ha! Needless to say, we felt a bit “old” with our kids in tow, modest “mommy” bathing suits juggling multiple water tubes and trying to keep the peace between the anxious children waiting in line. Ugh. So once we FINALLY got to the front of the line and pushed away the clowns trying to cut in front of us, we got to slide! Once! Woo hoo! Of course I couldn’t let the memory of this once in a life time slide slip from my brain so quickly… I HAD to make it memorable. So what did I do? I slipped on my butt, both feet flying into the air, landing on my back giving myself a wedgie. Annnnnnd with about 50 spectators witnessing my self-inflicted whip-lash, I quickly got up and honestly thought I was uninjured… until I tried to get up the next morning. I have never experienced a pinched nerve in my neck so severe with, what felt like, lightning bolts shooting down my back and shoulder with every little move I attempted. I am not one to take medication, but stayed in bed all day on Sunday high on narcotics and muscle relaxers. Thanks to a long-time friend and his magic chiropractic hands and electric machines, he cured my pain in a day! ONE day! Hallelujah!! You know moms can’t be bed ridden, we’ve got too much to do and little ones counting on us- especially a mommy of 5! Ain’t nobody got time for that!
