Over this past Memorial Day weekend, I took the kids to my parent’s house to swim and have a barbecue. They always LOVE going over to Grandma and Papa’s house. From the moment they woke up Monday morning it was the question of the day- “When are we going to Grandma’s house?”. I’m sure they asked about 100 times. No lie. When we finally arrived the kids jumped in the pool and quickly began exhausting themselves. Our attention quickly turned to the large mango tree in their backyard as we heard a loud thump from the tree. Mangos are in peak season and boy was the tree FULL of them!! My dad went and set up his ladder under the tree and each of my 5 children took turns picking ripe, beautiful mangos. Even my 20 month old baby girl climbed to the top of the ladder within 2 seconds (no exaggeration). She was a little excited to have a turn and be like the big kids. I just love her enthusiasm, it cracks me up how “big” she thinks she is. Even though we picked about 20 mangos, there were still a ton left that we couldn’t reach. Throughout the rest of the day we kept hearing THUMPS and one of the kids would run over and add it to our pile. So fun.
Of course, I immediately started thinking of mango recipes to create. And so a star was born… Thai Lettuce Wraps with Mango Salsa and Creamy Peanut Sauce! I can’t tell you how awesome this recipe is! Really! It’s one of my favorites right now on the blog. I kinda inhaled these wraps after the photo session. I couldn’t help it. The peanut sauce is light and a little sweet. Not at all bitter or over powering. I’m picky when it comes to peanut sauce and this one made me completely happy. But let’s talk about the hero of the dish… the mango salsa! It’s in-credible. I’m pretty sure I foresee a post featuring JUST the salsa itself. Yep. I see it.
I added unsweetened coconut flakes and salted peanuts on top to complete the experience. I highly recommend you make these sooner than later. They’ll become a favorite in your kitchen too.
