Swiss Chicken

Slow cooked Swiss Chicken is delicious comfort food everyone can appreciate. It only takes minutes to prepare and, yet, seems to get consumed even faster! It’s been a family favorite recipe for years and I know it will be for yours too. 

Last week I attended 2 Honor Roll assemblies. One for my 5th grade daughter and one for my 3rd grade son. It’s always rewarding as a parent to know your children are excelling in their studies. Eer…so I thought they were excelling. Just days later I had a quarterly conference with my daughter’s teachers who advised me that even though she is getting great grades in class, she is in danger of failing 5th grade due to the state’s mandated test. WHAT!? The Florida Standards Assessment test, if failed, will not allow my child to continue on to 6th grade, no matter what her grades are in class. How ridiculous is that? My children attend the top school in our county so I know they are being held to a higher standard in the classroom. Because my daughter is one of the youngest in her class, I hired a tutor for her months ago to ensure she stays on point with her grades. How could she be so off with her test taking according to the state? Oh how much I CAN’T stand these standardized tests! Not every child fits in the box. To have 1 test determine if a child passes the grade seems so far-fetched to me. So instead of teaching my child about true knowledge, I have to teach her how to pass a test. Whatever happened to getting good grades and that being good enough?! Ugh.

On days that I’m driving around like a mad woman, making sure my kids are getting to and from piano, scouts, dance, church activities, tutoring and ortho appointments safely- this recipe is always a win-win. Nothing better than a dinner that takes (maybe) 3 minutes to prepare and everyone is excited to eat! Yay for that!

Swiss Chicken

Ingredients

  • 4 chicken breasts
  • 1 can cream of mushroom soup
  • garlic powder
  • Italian breadcrumbs
  • 1 pack Baby Swiss cheese slices

Instructions

  1. Place chicken in single layer in crock pot or slow cooker. Sprinkle with garlic powder. Pour soup over chicken and spread on top.
  2. Top with Baby Swiss cheese. Sprinkle Italian breadcrumbs on top of cheese and cover. Cook for 3-4 hours on high or 6-8 hours on low.
  3. Before serving add another layer of cheese and breadcrumbs. Cover for 2 minutes and then serve.
