These soft boiled eggs wrapped in spicy sausage and drizzled with a creamy mustard sauce are a twist on Scotch eggs. Use your favorite seasoned sausage or combine them like I did! This recipe has incredible flavors and textures that make for a mouth-watering breakfast everyone will LOVE and devour!
Start by boiling your eggs for 6 minutes and then immediately placing them in an ice water bath. (this will prevent the eggs from continuing to cook and ensure a soft boiled egg)
Combine 1/2 lb Italian OR sage sausage with 1/2 lb spicy sausage. Add minced garlic, mustard, chives salt and pepper. Mix well.
Carefully remove shell from cooled eggs and wrap in sausage mixture. Be sure your sausage patties are not too thick as they will not cook all the way through.
Be sure entire egg is covered.
Roll sausage-wrapped egg in flour, then dip in egg wash and finish with Italian breadcrumbs. Place egg in saute pan with hot oil and cook on all sides until golden brown (about 3 minutes). Transfer fried eggs to baking dish and finish cooking in preheated oven for 5 minutes at 400 degrees.
Slice egg in half and serve with creamy mustard sauce. Enjoy!
**Side Note** The bowl of sauce you see in the picture was so I could DUNK each bite into it. It’s that good! I really wanted to drink it, but I held back. Maybe. My point is… don’t leave it out! It’s dreamy.

- 2 eggs for egg wash
- 1/2 lb spicy sausage

- 1 T dried chives
- 2 cloves garlic, minced
- 1 T brown mustard
- salt
- pepper
- flour
- Italian bread crumbs
- canola oil (for frying)
- 1 egg
- 5 T water
- 5 T vinegar
- 1/4 C sugar
- 1 T flour
- 1 T dry mustard
- 1/4 tsp celery seed
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 C heavy whipping cream
Instructions
- Preheat oven to 400 degrees.
- Bring medium pot of water to a boil. Add 5 eggs and boil for 6 minutes. Remove immediately and place in ice water bath to cool.
- Combine sausage, chives, garlic and mustard in large bowl.
- Carefully remove shells from cooled eggs. Press sausage into thin patties and wrap around eggs. Be sure egg is completely wrapped in sausage.
- Roll sausage-wrapped egg in flour, then dip in egg wash and then coat with bread crumbs. Transfer to saute pan filled with 1 inch of hot oil and cook for about 3 minutes, until all sides are golden brown.
- Place fried eggs in baking dish and cook in preheated oven for 5 minutes. Slice in half and serve with mustard sauce. Sprinkle with salt and pepper. Serve immediately.
- Whisk together egg, water and vinegar in bowl. Transfer to sauce pan and add all other ingredients and whisk. Cook and stir on medium heat until mixture thickens. Remove from heat.
