Soft and Chewy Cinnamon Oatmeal Cookies
Ingredients
- 1 C butter
- 1 C brown sugar
- 2 eggs
- 1 t vanilla
- 1 1/2 C flour
- 1 t baking soda
- 1 t salt
- 3 C oats
- 1 C cinnamon chips
- 1 t ground cinnamon
Instructions
- Preheat oven to 350 degrees.
- Cream butter and brown sugar together using an electric mixer. Add eggs and vanilla and mix well.
- In separate bowl mix flour, salt, ground cinnamon and baking soda together. Add to butter mixture and mix well.
- Fold in oats and cinnamon chips. (feel free to add more chips as you see fit)
- Using a 2 tablespoon cookie scoop, drop batter onto cookie sheet. Bake for 11-15 minutes or until edges are brown.
- Let cookies sit for 1 minute before transferring to cooling rack.
