Soft and Chewy Cinnamon Oatmeal Cookies

These soft and chewy oatmeal cookies have a secret ingredient. Shhhhhh… want to know what makes them SO delicious? The secret is cinnamon chips! These little morsels give each cookie a burst of flavor and creamy texture that makes them unique, yet, irresistible.

Soft Oatmeal Cinnamon Chip Cookies

Adding cinnamon chips is an easy way to add flavor and texture to oatmeal cookies. These cookies are soft on the inside and crispy on the outside. Perfect to sink your teeth into.

Soft and Chewy Cinnamon Oatmeal Cookies

Ingredients

  • 1 C butter
  • 1 C brown sugar
  • 2 eggs
  • 1 t vanilla
  • 1 1/2 C flour
  • 1 t baking soda
  • 1 t salt
  • 3 C oats
  • 1 C cinnamon chips
  • 1 t ground cinnamon

Instructions

  1. Preheat oven to 350 degrees.
  2. Cream butter and brown sugar together using an electric mixer. Add eggs and vanilla and mix well.
  3. In separate bowl mix flour, salt, ground cinnamon and baking soda together. Add to butter mixture and mix well.
  4. Fold in oats and cinnamon chips. (feel free to add more chips as you see fit)
  5. Using a 2 tablespoon cookie scoop, drop batter onto cookie sheet. Bake for 11-15 minutes or until edges are brown.
  6. Let cookies sit for 1 minute before transferring to cooling rack.

My name is Crystal Dangerfield and I am so excited to bring you tried and true recipes that my whole family and I enjoy together. I love being in the kitchen and trying new recipes. Of course we have our favorites, but my kids are pretty good sports about trying new things. I refuse to buy ready-made frozen meals and refrain from fast food. My kids do not know what a “happy meal” is and I want to keep it that way! My husband was diagnosed with Celiac’s Disease several years ago and I have had to learn how to alter recipes into gluten free versions that the whole family still loves.
