This weekend we are saying farewell to a family we have grown close to over the last several years. They are taking away one of the very best babysitters our little ones have ever had. Like as in they couldn’t wait for us to leave when she got there because we were not cool anymore. It’s never fun saying goodbye. Unfortunately, living in Florida we have grown accustom to goodbyes. Everyone is SO transient here. Stinks for those of us who are true Floridians and have roots.
Since I’m a big fan of this family, I volunteered to throw them a farewell party. They’re moving to Texas so I thought Tex-Mex would only be suitable. These Mexican Haystacks will be the main course. My family LOVES these. My husband says they’re one of his absolute favorites and describes them as an inside out burrito. I just know they’re much easier to make than burritos! Adding your own favorite taco toppings means no one complains which makes this perfect for serving a crowd.
