Slow Cooker Beef, Herb & Vegetable Stew

This slow cooker stew is FULL of veggies and tender beef that are slow cooked to perfection while absorbing a naturally flavored broth using eight different herbs and spices.  It far exceeds any stew packet you may use for seasoning! It’s a guilt-free AND gluten free meal, until you add the bread of course!

Slow Cooker Beef & Vegetable Stew (1 of 1)Just take a look at ALL those colorful veggies!! This stew is chock full of hearty goodness using natural ingredients to lure you in. For many years I used a seasoning packet with my stew, but it included wheat and MSG. I have been on the hunt for a recipe that was gluten free AND still had a flavor punch. It took me a while, but I can now say I have found THE recipe. Not only can I feed my gluten free husband this meal, but I can also feed my kids this delicious, healthy soup and feel totally good about it. Feeding the needs of my family with one meal is always an accomplishment.

Even if you don’t need to eat gluten free (like me), try it anyway! It’s delicious!! Serve it with a side of soft, warm and crusty bread and dunk away! Yum!

Slow Cooker Beef and Vegetable Stew (1 of 1)

Slow Cooker Beef, Herb & Vegetable Stew

Ingredients

  • 1 lb beef stew meat, cut into 1-inch cubes
  • 2 C cold water
  • 1 tsp pepper
  • 1 tsp salt
  • 1 1/2 tsp garlic powder
  • 1 tsp dried rosemary or 2 tsp fresh rosemary, chopped
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp marjoram
  • 2 bay leaves
  • 6-oz can tomato paste
  • 1 onion, coarsely chopped
  • 2 C red potatoes, quartered
  • 1-lb bag baby carrots
  • 1 red or green bell pepper, coarsely chopped
  • 1 C frozen green peas
  • 1 C frozen kernel corn
  • 2 medium tomatoes, coarsely chopped
  • 1 T corn starch
  • crusty bread (optional)

Instructions

  1. Add vegetables and meat to slow cooker.
  2. Measure water and add corn starch to cold/cool water and stir until well mixed. Pour on top of veggies and meat. Sprinkle herbs and seasonings into slow cooker and then stir all ingredients together.
  3. Cook for 6-7 hours on high or 8-10 hours on low heat. Add additional water if necessary.

My name is Crystal Dangerfield and I am so excited to bring you tried and true recipes that my whole family and I enjoy together. I love being in the kitchen and trying new recipes. Of course we have our favorites, but my kids are pretty good sports about trying new things. I refuse to buy ready-made frozen meals and refrain from fast food. My kids do not know what a “happy meal” is and I want to keep it that way! My husband was diagnosed with Celiac’s Disease several years ago and I have had to learn how to alter recipes into gluten free versions that the whole family still loves.
