Next week is Mother’s Day. I love receiving hand-made cards from my kids, abundant hugs and kisses and extra “I love you’s” from them all day. It’s a day I truly look forward to and next Sunday is no exception. Today while I was at church, we had a lesson the 3rd hour on the importance of mothers. The teacher is someone who I admire greatly and respect as a mother of 4. At the end of her lesson she reflected on one of the greatest gifts she ever received from her 4 children that are now grown. The gift was 52 envelopes with reasons each child loves her. Every Sunday she would open an envelope, dated for that week, and read 4 reasons (1 from each child) why they loved her. She cried as she gave examples of what they had written like ‘I love how you always stayed by my bed as a child when I was sick’ or ‘I love that you taught us the importance of patriotism’ and ‘I love that you never missed one of my sporting events’. I became teary eyed as she shared this example of her perfect gift. As a mother to 5 very young children, I’m in that stage of my life, and their lives, that I’m making these impressions on my children RIGHT NOW. I make mistakes daily and try not to repeat them. Lots of time I fail. I pray that they remember the good, the funny, the spiritual, the magical, the exciting and the loving moments that we share together. Being a mother is easy… said no one EVER!! It’s tough. Grueling sometimes. But as a willing mother who wants her children to experience all the joys of childhood, I stay anxiously engaged in their life. I want nothing more than for them to look back on their childhood and say “I had THE BEST childhood”. They are only children ONCE. How lucky am I that I have been given this opportunity on Earth to bear, love and raise these children given to me from heaven. I know no greater gift! Happy Mother’s Day to all you wonderful and selfless mothers out there!! It’s ALL worth it!!
If you’re husband needs some inspiration on what to make for Mother’s Day or if you want a dish that little hands can be of assistance with then these potatoes are your answer! They’re fun to make and delicious to eat. Just slice the potatoes in half, toss them in olive oil, salt and pepper and press a fresh sage leaf onto the flat side of the potato. Bake flat side down to adorn leaf to potato. In the end, you’ll have a beautiful side dish to serve.

Ingredients
- fingerling potatoes, sliced in half
- fresh sage leaves
- olive oil
- salt
- pepper
Instructions
- Preheat oven to 425*
- Line baking sheet with parchment paper. Place sliced potatoes into large ziplock bag and drizzle with olive oil, a little pepper and Kosher salt. Shake bag until coated evenly.
- {lace 1 sage leaf on each potato half then quickly flip over onto parchment paper. The sage leaf will stick as it cooks.
- Bake for 15-20 minutes or until potatoes are tender.
