It’s a no-hassle appetizer and a smart way to serve your guests because it can be prepared the day before and plated just minutes before it’s served. They wont be able to stop eating it- watch and see for yourself!
This recipe had me at hello. From the first bite I was hooked. I’m a huge fan of cheese balls. I think they are fun to serve and easy to prepare, especially since they can be made the day before you are expecting company. I don’t know about you, but with 5 children, we are always running late. Whether I am frantically cleaning my house before guests arrive or trying to dress my husband and 5 children before we walk out the door- I don’t want to worry about preparing something that needs constant attention. Whip this up the day before and stick it in the refrigerator until you are ready to serve it. Easy and completely phenomenal!
This recipe uses fresh garlic, roasted red peppers and feta cheese to give each bite a burst of flavor. The cream cheese and spinach are mild compliments to balance out the flavors. Adding a salty cracker for dipping, like Triscuits, complete the experience and keep you coming back for more! Just be on the look out for double dippers!
Ingredients
- 1 box frozen chopped spinach, thawed and patted dry
- 16 oz cream cheese, softened
- 8 oz feta cheese
- 12 oz jar roasted red peppers, drained and patted dry
- 1 large clove garlic, grated
- Triscuits or GF crackers/chips
Instructions
- With an electric mixer, blend softened cream cheese and feta together until combined. Add garlic.
- Add chopped red peppers and spinach. Mix well.
- Using 2 pieces of plastic wrap to form an x, pour mixture into middle and using all sides, tie tightly on top forming a ball. Place in a bowl to give additional form and refrigerate for 4 hours or over night.
- When ready to serve, remove plastic wrap and place upside down on platter. Decorate with greens such as kale and serve with Triscuits or gluten-free crackers or chips.
