Refrigerated Overnight Blueberry Oats

One of my favorite healthy breakfast alternatives is this Refrigerated Overnight Blueberry Oatmeal. It’s sweetened naturally with organic maple syrup and whole blueberries. Prepare it before you go to bed and leave in the fridge. When you wake up in the morning, you have a healthy breakfast that is ready to be eaten at home or on the go. And since I don’t have to prepare my breakfast that means I can hit the snooze button one more time! Genius!

Refigerated Overnight Blueberry Oats




There are many variations and flavors of refrigerated overnight oats out there. I have tried lots of them, but this recipe is my personal favorite. I use frozen blueberries since I buy the large bag from Costco. Fresh blueberries would totally work too, but I recommend adding those in the morning. I like using vanilla almond milk as well. Helps give the oatmeal a little more sweetness and provides less fat than milk. If you like your oats with a little more bite to them, not so soggy, you could totally prepare this in the morning and eat it when you get to work. The oats won’t be as soft, but there would definitely be more texture. My favorite part about this recipe is the blueberry-flavored almond milk. Silk needs to invent THAT as a flavor to sell. It’s amazing!

Refigerated Overnight Blueberry Oatmeal

This Simply Balanced organic maple syrup is my go-to syrup 100% of the time. Gone are the days of Aunt Jemima and high fructose corn syrup with our breakfast. It’s light and sweet with the perfect amount of mapley flavor. Simply Balanced is Target’s organic line, which means you can only find there. It’s just another excuse to go to Target if you ask me! hehe

Refrigerated Overnight Blueberry Oats

Ingredients

  • 1/2 C old fashioned oats or GF rolled oats
  • 1/3 C frozen or fresh blueberries
  • 1/2 C vanilla almond milk
  • 2 tsp organic maple syrup
  • 1 tsp vanilla extract
  • 2 tsp chia seeds (optional)

Instructions

  1. Combine all ingredients in mason jar, cover and shake. Refrigerate for up to 8 hours.

Notes

If you're using fresh blueberries, not frozen, then I recommend adding those in the morning.
