These Reese’s Peanut Butter Cupcakes have a little hidden surprise in the middle just waiting for you to sick your teeth into. With a moist cake and sweet homemade peanut butter icing these cupcakes are not only eye candy, they are dangerously delicious too.
I love the combination of peanut butter and chocolate. You just can’t go wrong. I have been baking these cupcakes for a few years now and every time I make them they are a hit. The cake is actually from a Devil’s Food Cake box with some added ingredients. One of the ingredients is chocolate pudding mix which helps create the light and fluffy texture. The frosting is easy to whip up. Don’t be intimidated by making your own. It really is easier than you think. The final product is definitely worth the little extra time. Promise!
After you’ve made your batter, scoop about 2 tablespoons into the bottom of your paper baking cups. Press 1 peanut butter cup into batter. (I suggest you freeze the peanut butter cups ahead of time, this way they don’t melt into the cupcake as it bakes) Then cover the peanut butter cup with 1 more tablespoon of batter.
Bake your cupcakes for about 15 minutes or until spongy on top. Let cool. Pipe on frosting and sprinkle with additional pieces of peanut butter cups. (Again, freezing the peanut butter cups ahead of time makes it easier to chop them with a knife.)
Oh my goodness! Seriously? How delicious does this look? They are so moist and sweet and biting into that Reese’s Peanut Butter Cup is the best surprise! I just finished eating about 3 of these today and my mouth is still watering just looking at these pictures!
