If you need a simple dessert this Fall that will give rave reviews try this Pumpkin Spice Eggnog Tres Leches cake. A moist 3-ingredient cake soaked in pumpkin spice eggnog, sweetened condensed milk and cream. In other words, it’s a Latin poke cake with 3 milks. Top it with Cool Whip and dust with cinnamon.
You’ve heard of poke cakes before, well this is the Latin version of a poke cake. Tres leche means 3 milks. The milks of choice are usually regular milk, sweetened condensed milk and evaporated milk. I’m stirring things up a little bit after a light went off in my brain when I bought this Pumpkin Spice Eggnog. How could it NOT be good?! Well, I’m here to tell you… it wasn’t good. It was incredibly DELICIOUS!!
A few months ago I was browsing through Facebook when a name popped into my head. It was the name a childhood friend I knew when I was just a few years old. Her name was Carmen and she lived around the corner from our house. She was 7 years older than me, but loved coming over to visit. She would frequently take me to her house where I can remember swinging on her rope swing, playing with her humongous cat, eating snacks and hanging out with her school friends. ( I thought I was one of the cool kids) I remember being afraid of her brother Jimmy. He was quiet, but a bit excentric. A definite artist. My mind can’t remember much about our young friendship, I just knew I liked being with her. She was the only neighborhood friend I had for a long time since it was mostly an elderly population around us. We moved from that house when I was 12 so our contact was minimal after that. I would see her at the mall on occasion, where she worked. But once she left there we lost touch. When I looked her up on Facebook, much to my surprise, I found her right away! I quickly wrote her a message and we began chatting back and forth. She was amazed I had looked for her at this time since she had just joined Facebook 4 months earlier. She had finally given in to social media. Perfect timing! Within a week I had her, her husband and new 4 month old baby boy over for dinner along with my parents and sister for a big reunion. She was able to meet my husband, 5 children and catch up on so many years past. My husband made a new bromance with her husband as they both love to build. They were talking saws and wood all night. After they left my husband asked me, “Why haven’t we gotten together with them sooner?!”. LOL Since then we have had few double dates and lots of chatting back and forth. I’m so grateful we were able to make that contact again. With some people you can just pick right up where you left off and keep going like nothing was ever lost. I love those people!
I made this recipe the first night Carmen and I reunited. It was a huge hit, especially with her husband, Roberto. Here you go Roberto… just for you!
