I’m a total cookie girl. I’ll pass up cake any day for a cookie. Whenever I’ve been pregnant (and that’s been a whole heck of a lot of times, like 9 to be exact) I’ve always craved cookies. I didn’t crave cookies from a box, I wanted warm, freshly baked cookies. Since I couldn’t make cookies EVERY day, my husband would buy me the Toll House cookie dough and bake me a few cookies every night in our toaster oven. It was just what

It’s been almost 3 years since I’ve been pregnant and the cravings for freshly baked cookies have not gone away. Only problem is, I don’t have a baby to blame it on now! :/
Start by mixing creamy peanut butter with powdered sugar and rolling into 1-tablespoon balls. Using a cookie scoop here works really well. Place in freezer until ready to use.
Scoop 2-tablespoons of cookie dough into your hand and flatten out in the palm of your hand. Place 1 peanut butter middle in the center. Carefully cover the entire peanut butter ball. If any is left exposed, it will leak out of your cookie. Once covered, roll the cookie in between your hands to make a round ball.
Roll cookie dough into cinnamon sugar.
Place on parchment paper and bake at 350* for 8 minutes. Serve warm.
