This year we celebrated Thanksgiving a day early. My husband, who is a firefighter, had to work on Thursday so we invited everyone over a day early and knocked it out. We had 25 people join us and it turned out to be a beautiful celebration! I lined up tables in my back patio, decorated them with a long runner of burlap, gourds, pumpkins, candles and flowers. The food was amazing and plentiful, the company was genuine and loving. I’m so grateful to have friends that are like family and family that lives so close and is supportive of me and my tribe. It warms my heart when the children of friends (and even my own children) think they’re cousins. They’ve grown up together, vacationed together, spent holidays together, birthdays and celebrated achievements together. LOVE that close relationship we can develop as friends and nurture into one that’s as close as family.
Moving on to the dessert topic… I made this brownie a few years ago for a family that had just moved to Florida from Colorado. They were in the middle of getting settled into their new home so I offered dinner. This dessert was the winner of that meal and it continues to be the winner of many other meals I’ve made for company. And when I say winner, I mean like eyes rolling to the back their head, deep sighs, asking for seconds, and OMG type comments. It’s a pretty awesome feeling knowing you can create such a euphoric feeling for people with food. And I’m no exception to that feeling, especially with THIS dessert! 🙂
Ingredients
- 1 C old fashioned oats
- 1/2 boiling water
- 1/2 C butter
- 1 brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp baking soda
- 1/4 tsp cinnamon
- 1 1/2 C flour
- 1/2 tsp salt
- 1 stick salted butter
- 1 C evaporated milk
- 1 C sugar
- 2 egg yolks, beaten
- 1 tsp vanilla
Instructions
- Preheat oven to 350 degrees. Place oats in small bowl. Pour boiling water over oats and let sit 20 minutes.
- In a large bowl, cream sugar, brown sugar and butter together until light and fluffy. Add eggs and vanilla. Mix in oats.
- Sift together baking soda, cinnamon, flour and salt. Add to wet ingredients. Beat until combined. Batter will be thick.
- Pour into 11x7 dish. Bake for 30 minutes or until toothpick comes out clean.
- Place ingredients into cold saucepan and stir together. Place on medium heat, stirring continuously. Bring to a boil and cook until thickened. Remove from heat and serve over warm oatmeal brownie. Top with ice cream, whipped cream, nuts or coconut.
