I love pumpkin flavored dishes, but I will admit I have never been a lover of the traditional pumpkin pie. This no-bake double layer pumpkin pie is totally nontraditional and THAT is why I love it! It has a sweet cream cheese layer on the bottom and a delightful pudding-like pumpkin pie layer on top. Make a big pie for the adults and cute individuals ones for your little turkeys this Thanksgiving.
I was given this recipe years ago by my friend Allison. It was her mom’s recipe that she grew up eating every Thanksgiving. I was a little hesitant trying it at first since I have never enjoyed eating traditional pumpkin pie. She assured me it was much different… and it was! The creamy textures of both the pumpkin and cream cheese layers are so much more palatable that I can now enjoy eating a slice (or two) of pumpkin pie. I’ve been making this for over 10 years now and look forward to it every Thanksgiving.
