Ever since my friend Lily introduced me to this fun little salad, I’ve been addicted. I LOVE mozzarella caprese from any Italian restaurant, but never thought about making it at home. This mini version is perfect for eating on the go, which I do too often. Don’t have fresh basil? No worries! Just sprinkle some dried basil on top. It will still be delicious. It makes for a beautiful appetizer and side dish… annnnnnd midnight snack, if I might say so!
I recommend using a little flavor booster for the salad. If you’re trying to be health conscious then Flavor God’s Pizza Seasoning is a good one to use. It’s low in salt, gluten free with no GMOs. You can only buy it from the Flavor God website, but is perfect for all you clean eaters out there! I’ve also used a Sicilian blend seasoning which gives this salad a great flavor too. I stole the seasoning straight from my Dean Jacob’s bread dipping variety pack. These variety packs are easy to find in your local grocery store.(Our grocery store keeps them in the bakery department near the fresh bread.) If you don’t think your salad needs anything extra then just a little sprinkle of salt on your tomatoes will do too!
