Don’t let these carrots fool you… Right now you’re thinking side dish, but after you taste them they’ll be calling your name for dessert too! They’re THAT good. If you’re like me, you’ll find yourself eating them with your fingers right out of the pan. Can you say dangerously delicious?!
While eating dinner tonight I played a little guessing game with my kids- I would recall something cute I could remember them doing or saying when they were super little and they would guess which one of them it was. I said things like, who thought that their great-grandmother Mémère lived in the pool because she was so wrinkly? or who thought that after learning the word metamorphosis they could speak spanish?! and who thought that Grandma had Diet Coke, instead of milk, in her boobies? Jajajaja!!!! Every time I would finish, they would ALL raise their hands. They were totally cracking up at each little story, it was so fun. And just in case you’re wondering…. it was really difficult coming up with funny memories for each child ON THE SPOT. They kept asking for more stories! The pressure!! My husband just sat on the other end of the table with a blank stare saying he couldn’t think of anything! Really??!! Thank goodness for a mother’s ability to think quick and dig out those precious memories that reflect how special each of your babies are to you. It’s a maternal gift.

Ingredients
- 1 lb whole carrots, sliced in half
- 2 T butter
- 2 T honey
- 2 T packed brown sugar
- 2 tsp dried dill
- 2 tsp dried thyme
Instructions
- Melt butter in large skillet over medium heat. Add sliced carrots, honey, sugar and herbs.
- Stir occasionally and cook carrots until tender (approx 15 minutes).
