Honey Balsamic Salmon

This Honey Balsamic Salmon is a great way to kick off healthy eating in 2015. Create this delicious sauce that is full of flavor, with a hint of sweetness, and you’ll forget you’re actually eating healthy! 

Honey Balsamic Salmon (1 of 1)   Happy New Year to everyone! I hope 2015 will be an amazing year full of many accomplished resolutions as well as health and happiness for you and your families. We ARE capable of change and here at the Dangerfield home we have committed our children to making some resolutions of their own. Some examples are no more talking about butts or passing gas at the table, no more hitting, no more yelling in the house and no more tattling. They may seem funny and very minor, but really, how embarrassing is it to have people over for dinner and have your 4-year-old making fart sounds at the dinner table? Ugh. We are also encouraging them to give each other positive reinforcement and use helpful words instead of criticising one another. Trying to raise 5 children can be a HUGE challenge, especially in the world we live in today. If they can have positive experiences and loving conversations in their home as they grow, my hope is that they will continue that example outside of the home too. We’ll give it a go and see how far it takes us!

Okay so back to food! So many of you have told me how you want to cook more from home. I hope you commit this year and use my recipes to guide you. This salmon recipe is a great way to start. It’s easy and has a hint of sweetness that will encourage even those picky eaters to eat it. We also LOVE to eat the Rosemary Salmon recipe too. My 8-year-old eats a whole filet by herself and if you leave your plate unattended, she may steal a bite off your plate. Encourage your kids to eat salmon! It’s so incredibly good for them. The younger you start them, the better! I want to hear your success stories with meal making! Please feel free to share them as you go!

Honey Balsamic Salmon

Ingredients

  • 4-6 fresh salmon fillets
  • 4 cloves garlic, minced
  • 1 T white wine
  • 1 T honey
  • 1/3 C balsamic vinegar
  • 4 tsp honey mustard
  • salt and pepper to taste
  • fresh or dried oregano for sprinkling

Instructions

  1. Preheat oven to 400 degrees. Line baking sheet with aluminum foil.
  2. Coat a small saucepan with nonstick cooking spray. Over medium heat, cook and stir garlic until soft. (about 3 minutes) Add white wine, honey, balsamic vinegar, honey mustard, salt and pepper. Simmer few minutes until slightly thickened.
  3. Arrange fillets skin side down on foil-lined baking sheet and brush with sauce.
  4. Bake salmon for 5 minutes and remove from oven. Brush fillets with remaining sauce and sprinkle with fresh chopped oregano or dried oregano. Return to oven for another 7-9 minutes.
  5. Enjoy!
