Since my husband was diagnosed with Celiac’s Disease years ago, I have gotten use to eating certain things without bread, cheeseburgers and hot dogs in particular. To be honest, I really don’t miss the buns. We just load up the meat with all our toppings and eat it with a fork and knife. My kids are totally conscious and very knowledgeable about what is gluten-free and what is not. They understand ingredients and know what Daddy can and cannot have. My oldest daughter is extremely aware of what Daddy eats. When he was first diagnosed, he had a difficult time of following his new diet restrictions. I would come home from work and she would tell me, “Mommy, Daddy had a bite of my cookie and it was NOT gluten-free”. Busted! I will admit it is not the easiest to make a super yummy dessert or meal and not have him try it or give a second opinion if it’s not gluten-free. I want to share! I do try to make those recipes when he’s on shift, then it’s not such a temptation on both our parts!
