My family and I are loving this freshly Grilled Teriyaki Chicken Salad With Green Onion Dressing this summer and we think you will too. If you’re second guessing the homemade green onion dressing… don’t! It’s what makes this salad taste so fresh and delicious. You’ll be pleasantly surprised.
As I sit here writing this post, my husband is next to me sketching out a new bunk bed style I came up with in my head. So far we have sold 3 different styles of kid’s bunk and loft beds that we are so proud of. (check them out HERE) Because business has picked up, we were forced to sell the original bed (my 5-year old daughter Layla’s bed) which has left the bedmaker’s daughter sleeping on the floor. She hasn’t complained, but I can’t say the same. Even though he has pending orders, family comes first. I’ve shared with him my vision in many recent conversations, but he’s just now realizing that this new creation is going to be more work than the previous. (oops) I have no doubt that he can pull it off and it will be AWESOME. This time around, the bed will not only be for Layla, it’ll be for our youngest daughter too. Both girls have been begging to share a room and we could not be happier to make that happen for them.
I served this salad for dinner the other night and it was a hit. I think we were all a little skeptical about the green onion dressing, but it actually turned out to be the best part! We also loved all the crunchies this salad calls for. I used a GF teriyaki marinade for the chicken, but you could use your favorite brand. I placed all the ingredients on the table and let everyone make their own which went quite well. My husband, of course, omitted the chow mein noodles since they’re not GF, but since I didn’t make the salad beforehand, it didn’t contaminate anything. LOVE dinners that take minor tweaking and are still delicious for him!
Ingredients
- 4 green onion stalks, chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 C sugar
- 1/4 rice vinegar
- 1/2 C olive oil
- 4 chicken breasts
- teriyaki marinade
- Iceberg lettuce (I've used spring mix too and it was delicious)
- 1 can water chestnuts, drained
- 1/4 C sesame seeds, toasted
- 1/2 C slivered almonds, toasted
- 1 10-oz can mandarin orange segments, drained
- chow mein noodles or fried wonton strips (omit if GF)
Instructions
- Place chicken in bowl, pour teriyaki marinade over chicken and refrigerate, covered, for at least 1 hour. Grill chicken until cooked thoroughly and cut into strips.
- Place all ingredients for dressing into blender and blend until smooth. Refrigerate until ready to serve.
- In large bowl, toss together lettuce, water chestnuts, sesame seeds, almonds, oranges and chow mein noodles (or wontons). Add chicken strips and dressing, toss again. Enjoy!
