Use this simple marinade for your cookout this summer! Frozen lemonade, combined with soy sauce and other seasonings, creates a tangy, savory dish perfect for the whole family.
My oldest daughter, Haylie, is constantly looking over my shoulder when I’m cooking dinner. If it’s something we haven’t had before (which is often), the first question she ALWAYS asks is… “Is it sweet?”. She will give me such grief if our meal has any type of sweetness or fruity flavor. She wants her meals savory and desserts sweet. She does not like sweet n’ sour meatballs, Coca Cola pulled pork, sweet dipping sauces for meat or sweet salad dressings. Don’t get me wrong, she’ll eat them, but at a very slow pace and with much whining. She knows if she doesn’t, she won’t be eating dinner. I’m all about eating what you’re given or going to bed hungry. It’s their choice.
You can probably guess what she asked me as soon as she saw the lemonade concentrate for this marinade. Yep! “Is it sweet?” This recipe is NOT sweet. There is no added sugar. It’s actually very tangy and delicious. Even Haylie would agree! The marinade creates a beautiful glaze while on the grill. Be sure to squeeze fresh lemon juice or just serve with a side of lemon. The fresh lemon juice will “brighten” the flavor of this chicken after it’s grilled so don’t leave it out!
Ingredients
- 4 boneless chicken breasts
- 6 oz frozen lemonade concentrate, thawed and undiluted
- 1/2 C soy sauce or GF soy sauce
- 1 tsp seasoned salt
- 1/2 tsp celery salt
- 1/8 tsp garlic salt
Instructions
- Combine all ingredients and marinate chicken for 30 minutes to 1 hour. Grill chicken, brushing frequently with marinade. Serve with slices of lemons.
