With only 4 ingredients, this chicken is an easy and delicious dinner to serve your family. The sauce is full of flavor and will leave your kids licking their plate (at least mine do). Serve with brown rice, sauteed mushrooms and a salad and you have yourself a healthy, satisfying meal.
One of the many pros of having a husband work for the fire department is that he learns of some pretty good recipes passed down from the “chefs” of the station, also known as rookies. Haha!! This chicken has made a frequent appearance at our kitchen table ever since my husband tasted it at the fire house many years ago. Not only is it easy to prepare, but cooking it is easy too. I just mix up the ingredients, pour over the chicken, cover and let simmer on low heat for about 20 minutes and whala! That’s it. Easy peesy!!
This recipe can easily be modified to be Gluten Free by simply using a GF Italian dressing mix. The 365 version sold at Whole Foods is the perfect substitute. I buy it in bulk and use it in many recipes. You honestly can’t taste the difference.
Ingredients
- 4 chicken breasts
- 1/3 cup balsamic vinegar
- 3 T water
- 1/2 cup + 2 T olive oil
- 1 packet Good Seasons Italian dressing mix packet or substitute with GF Italian mix from Whole Food's own 365 line
Instructions
- Whisk together balsamic vinegar, water, olive oil and dry Italian seasoning packet.
- Pour about 1/4 cup of mixture onto bottom of saute pan then place chicken on top.
- Pour remaining liquid mixture over chicken and cover with lid.
- Let simmer on medium low heat for about 10 minutes and then turn chicken over to simmer for about another 10 minutes, or until tender and moist on the inside.
- Spoon additional sauce over chicken when serving.
