Last year I seriously bought about 5 boxes of Alpine’s Apple Cider drink mix because I was so sure I was going to LOVE these cookies. The cookie itself was perfectly flavored like apple cider, but the caramel center was just too chewy and not enjoyable to me. I had to use my molars to bite into it. Brainstorming with my husband, he suggested I use dulce de leche instead. Genius!!! After trying a couple different variations like thumbprint filled cookies and just drizzled dulce de leche, I decided that the creamy center version was absolutely perfect! These cookies are a must try for Fall and any cookie exchange you may have. The dulce de leche center is always soft and creamy, never hard and chewy. They are seriously unbelievably amazing!
Scoop out dulce de leche onto a parchment lined baking sheet. Place in refrigerator for 15-30 minutes.
Flatten out cookie dough in palm of your hand and place a chilled ball of dulce de leche in the middle. Wrap edges around the dulce de leche and roll into a ball. Be sure the center is completely covered or it will leak out. Bake for 12 minutes and let rest on baking sheet for few minutes before transferring to a cooling rack.
