Duke’s Parmesan Chicken

Duke’s Parmesan Chicken is one of those simple weeknight recipes you could fix every week without fail and it would happily satisfy your whole family every time. I know this to be true because that’s exactly what I’ve been doing for… oh about 3 months and no one has complained once! This dish infuses the unique flavor of Duke’s mayonnaise with the rustic, salty flavor of toasted parmesan cheese and garlic. It’ll become your new go-to meal, just as it has become mine! You’ll see why as soon as you try it!

This year for Easter my three oldest children received their own children’s cookbooks and cooking supplies in their Easter baskets. (they’re 10, 9 & 7) I was a little concerned about what their reaction would be, but quickly learned how excited they were to cook their first meal all by themselves. I was pleasantly surprised that among the candy, sling-shot rockets, books and other gadgets that were in their baskets- the cookbooks were what they were most excited about! They started thumbing through pages picking recipes they wanted to make right away. Some recipes we had the ingredients for and they quickly went to work and others they made a grocery list for. Can I just tell you… I didn’t cook dinner for a week because they took turns in the kitchen making dinner and wanted to do it ALL. Not every meal was a winner (jajajaja), BUT they tried and were excited and proud and willing to try something new. ALL pluses! I hope to continue the trend of them cooking and feeling more and more comfortable with the stove top and oven. Who knows…maybe they’ll start their own recipe blog someday!

Duke’s Parmesan Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 C Duke's Light Mayonnaise
  • 1/2 C freshly grated parmesan cheese
  • 1 tsp seasoned salt
  • 1 tsp garlic powder
  • 1/2 tsp ground pepper

Instructions

  1. preheat oven to 375 degrees.
  2. Combine mayo, cheese, salt, garlic and pepper in small bowl. Spread mixture over chicken and bake for 35-40 minutes, or until thoroughly cooked.

Notes

I HIGHLY recommend using Duke's Light, the non-light version makes this dish very greasy and the mixture has a hard time sticking to the chicken.
