Prepare your family a taste of Fall with this pumpkin pie oatmeal. Simply combine the ingredients in your crockpot the night before and wake up to the warm aroma of pumpkin pie. You may even prefer this breakfast version over the real thing! It’s THAT good!
We make all kinds of versions of crockpot oatmeal at our house. I love how versatile it is. The hearty flavor of the steel cut oats does not even compare to any instant oatmeal. Taking 5 minutes to prepare it in the crockpot before I go to bed ensures everyone will have a delicious and nutritous start to their day. What mom doesn’t feel great about that? So much better than fixing 5 kids 5 different things in the morning. Ugh. And that would be after I repeatedly asked, “What do you want to eat for breakfast?” as they stood in front of the refrigerator and pantry for 10 minutes. Make something they’re excited about and my morning is that much easier. Yes please!
Ingredients
- 1 3/4 C Sweetened Vanilla Almond Milk
- 1 1/2 C water
- 1 C steel cut oats (gluten free if desired)
- 1/4 C brown sugar
- 3/4 C pumpkin puree
- 1 tsp vanilla
- 1-2 T pumpkin pie spice
- 1/4 t salt
- 1 1/2 T butter, cut into 5-6 pieces
- Optional toppings: toasted chopped pecans, maple syrup, brown sugar, graham crackers, whip cream, milk, butter, raisins
Instructions
- Coat inside of slow cooker with cooking spray.
- Add all ingredients, except toppings, to crock pot. Add only 1 T pumpkin pie spice at this time.
- Stir and cover. Turn on low and cook for approximately 5 hours or until oats are soft.
- Stir and taste. Add additional 1 T pumpkin pie spice if desired. Serve with optional toppings.
