Not a morning person like me? Imagine waking up to the sweet smell of apple pie in the morning and indulging in this healthy version of steel cut oats perfectly spiced with apples, cinnamon and toasted pecans. There really is no better way to start off your day. This recipe will have you looking forward to the morning.
My husband is a morning person. I am not. He learned very early after we were married that I am not very chipper when I wake up. It takes me a bit. He would pop up and start asking me questions like “How did you sleep?”, “Did you have any dreams last night?”. He always seemed to do this in a very energetic and skippy kind of way. My brain was still half asleep and was being forced to process all these questions! I would give him a look of confusion… seriously, are you asking me all this NOW? He finally realized that he needed to slow down with the questions and just let me ease into conversation. Now those days seem like forever ago. We try to squeeze in every last minute of rest and have to literally hit the ground running in the morning. Whether it’s waking up at 5:15am to get ready for work or getting kids ready for school in the morning- we have to be awake and alert immediately. After 5 kids, sleep is not a first priority anymore. Honestly though, I’d have it no other way.
Having this oatmeal ready to go in the morning is one last thing not to worry about . The apples are soft and sweet and the steel cut oats tender and creamy. I love it topped with toasted pecans, I want some with every bite. You can also top it with graham crackers, whip cream, raisins or granola. Refrigerate whatever is left, it’s great the next day too!
Ingredients
- 1 C steel cut oats or GF steel cut oats
- 1-2 apples, peeled, cored and cut into 1/2 inch pieces
- 2 C Vanilla Almond Milk (not unsweetened)
- 1 C water
- 2 T brown sugar
- 1/2 t cinnamon
- 1/4 t salt
- 2 T butter, cut into small pieces
- Toppings- toasted pecans, raisins, whip cream, graham crackers
Instructions
- Spray inside of crockpot with cooking spray.
- Add all ingredients (except toppings) to slow cooker and stir.
- Cover and cook on low for 6-7 hours. If oatmeal looks too thick, add another cup of water and stir.
- To toast pecans, place on baking sheet and bake at 350 degrees for about 4-5 minutes.
