Crispy Chicken Wraps

These Crispy Chicken Wraps are an easy go-to meal that you can prepare quickly and cooks in no time! They’re easy, healthy and filling! For even faster preparation, and a Gluten Free version, top tortilla chips with the chicken mixture and you have yourself some incredibly delicious nachos!

Crispy Chicken Wraps (1 of 1)Chop up 1/2 red, green or orange pepper and 1/2 of small onion. Saute in olive oil until tender. Add brown rice, black beans, chopped cilantro, chicken, spices, onion, pepper and lime juice to bowl.

Crispy Chicken Wrap Ingredients-1Mix ingredients well. Add 1/2 cup sour cream and mix again.

Crispy Chicken Wrap Ingredients.-1Sprinkle cheese onto flour tortilla and then add a heaping spoonful of chicken mixture on top. Add more cheese on top and start folding.

Spray skillet with nonstick cooking spray and place wrap folded side down first. This will allow the wrap to take shape so when you flip it the tortilla will not come apart. Pick up wrap with spatula and spray skillet again before flipping it onto the other side. Continue to cook until golden brown and serve immediately with salsa and sour cream for dipping.

Crispy Chicken Wraps

Ingredients

  • 1 C shredded rotisserie chicken
  • 2 packages Seeds of Change Brown Basmati Rice
  • 1/3 C red, green or orange pepper, chopped
  • 1/3 C yellow onion, chopped
  • 1 can black beans, rinsed and drained
  • 1/3 C chopped cilantro
  • juice of 1 lime
  • 1 T chili powder
  • 2 tsp cumin'
  • 1 tsp garlic powder
  • 1/2 C sour cream and additional for dipping
  • shredded Mexican or Monteray Jack cheese
  • Large tortillas
  • nonstick cooking spray
  • salsa for dipping

Instructions

  1. Saute chopped onion and pepper on medium heat in 1 T olive oil until tender. Cook brown basmati rice in microwave as directed on package.
  2. In large bowl mix rice, chicken, onion, pepper, cilantro, black beans, spices, lime juice and sour cream until well combined.
  3. In the middle of a large tortilla, sprinkle shredded cheese. Place heaping spoonful of chicken mixture on top of cheese and then add more cheese on top. Wrap up tortilla.
  4. When skillet is warmed to medium heat, spray with nonstick cooking spray and place wrap folded side down. When tortilla is golden brown on one side, spray skillet with nonstick cooking spray again and flip wrap over on top of spray.
  5. Serve with salsa and additional cream cheese for dipping.
  6. Gluten Free Version
  7. After ingredients are mixed in bowl, spoon mixture on top of GF tortilla chips. Top with shredded cheese and microwave until cheese is melted. Serve with sour cream and salsa for dipping.

Dangerously Delicious

My name is Crystal Dangerfield and I am so excited to bring you tried and true recipes that my whole family and I enjoy together. I love being in the kitchen and trying new recipes. Of course we have our favorites, but my kids are pretty good sports about trying new things. I refuse to buy ready-made frozen meals and refrain from fast food. My kids do not know what a “happy meal” is and I want to keep it that way! My husband was diagnosed with Celiac’s Disease several years ago and I have had to learn how to alter recipes into gluten free versions that the whole family still loves.
