It’s summertime and my tan is in full swing!(kinda) We just got back from a week in St Augustine, spending every day at the beach. Since we’ve been back the kids and I have already had 2 pool days full of sun. Needless to say, we’re now pealing each others backs and shoulders like little monkeys. Lol My father is Puerto-Rican and has always had a darker complection than me. His genes skipped me and went directly to my oldest daughter who tans darker than anyone else in our family. Even though we have been in the sun the same amount of time, she is a brown bean. Like, really brown! She never burns, just keeps getting darker making her light eyes stand out even more. We’re all a little jealous of her beautiful skin (& eyes) and she knows it too! She’s my little beach babe.
I love this dish for summer. It’s sweet and salty with lots of crisp bacon and vegetables in each bite. You want to make sure you add the bacon just before serving so it doesn’t get soggy. And be sure to cook plenty of it, your mouth will want a little bacon with each bite. This dish can easily be doubled or tripled for more servings.
