The first time I had this meal was when a good friend of mine, Laura Gourley, brought me dinner after I had my third child. She was so gracious to make us dinner and assured us that this was one of her family’s favorites. I immediately LOVED this dish. I have now been making it for my family for the past 7 years and I can promise you there are rarely leftovers. It gets devoured within minutes. I usually serve this with a side of broccoli, baked asparagus or steamed green beans.
