Creamy Italian Crockpot Chicken is hands down one of my family’s favorite meals. Don’t let the bland color fool you- this meal has a flavor punch that will have you licking your plate clean. Literally. The best part… I can make this gluten free without ANYONE knowing the difference.

I was first introduced to this recipe after my 3rd child was born and my friend Laura Schlofman brought us this dreamy dinner. It immediately became one of our family favorites. I have served this meal to so many of our guests and everyone asks for the recipe. No one can have just a single serving. I’m talking like going back for thirds. No lie. Be sure to make enough for everyone because it’s gonna be a hit! I usually serve the chicken with pasta just because that’s what my kids prefer, but the recipe was introduced to us served with rice. Either way is delicious!
I’ve delayed posting this recipe because, honestly, as soon as it’s ready I can’t keep it from being devoured by my kids and husband. It’s literally gone within minutes out of my crockpot leaving me with nothing to take a picture of. The other reason I was hesitant is because it looks so plain! How do you make something with little or no color look as delicious as it tastes!? You’re just gonna have to take my word for it and try it yourself.

Ingredients
- 1 8oz block cream cheese
- 1 packet Simply Organic Italian Dressing Mix (from Whole Foods)
- 1 1/2 C GF chicken broth or stock
- 2 T Better Than Boullion, chicken flavor
- 3T corn starch mixed into 1/4 C COLD water
- 4 regular sized boneless chicken breast
- white rice or GF pasta, cooked as per package
- 1 can Cream of Chicken soup
- 1 8oz pack cream cheese
- 1/2 C milk
- 1 0.7oz packet Good Seasons Italian Salad Dressing & Recipe Mix
- 4 boneless chicken breasts
- rice or pasta, cooked as per package directions
Instructions
- On stovetop, bring chicken broth to a boil and add Better Than Bouillon. Stir until dissolved. Mix corn starch with COLD water and pour into boiling broth. Stir well and reduce heat to medium.
- Add block of cream cheese and Italian seasoning packet and continue to stir until cream cheese has melted.
- Place chicken breasts into crockpot and pour creamy mixture on top. Cook for 3-4 hours on high or 6-8 hours on low.
- Serve shredded chicken on top of rice or pasta.
- On stovetop, cream together Cream of Chicken soup, cream cheese, milk and Italian seasoning packet.
- Pour on top of chicken in crockpot and cook on high for 3-4 hours or low for 6-8 hours.
- Serve shredded chicken on top of rice or pasta.
