I’m totally hooked on this Creamy Grape Salad with Brown Sugar and Pecans! It’s a sweet, juicy goodness that whips up in just minutes! Make it for dessert, serve it as a side or have it for a snack, whatever you decide to label it- I promise it won’t disappoint!
We shop at Costco a lot. Maybe I should emphasize A LOT. The necessities for 5 growing children and a family of 7 are pretty large. I can tell you that every time I leave I have 2 carts. Up until just a few months ago (when Mia out grew her kangaroo pouch) this is what you would see… me pushing 1 cart and pulling another with a baby strapped to my chest, 1 child squished in a cart (somewhere), 3 children walking next to/”helping” push the carts and rubber neckers literally just watching us pass by them wondering who the crazy woman was who decided to go to Costco with all the neighborhood kids… yep that about sums it up.
I once ran into one of the cardiologists I work with frequently in the ER (who is drop dead gorgeous). While having a conversation on his phone, he so graciously stopped and said, “You have enough kids?” and then continued on with his conversation. Yeah, not so good lookin after that buddy! Really? Cocky bastard. Did I say that? Sorry. No, I’m not really. Ha! I can laugh now, but it wasn’t very funny at the time.
I would literally be sore the next day. My forearms would be on fire! But when you need diapers for 2 kids, wipes, 5 gallons of milk, 4 dozen eggs, etc, etc… it becomes a work out! We have now resulted to other options, like Amazon. Having big bulky items show up on your doorstep is uh-mazing folks!! Things like diapers, paper towels, toilet paper, paper plates (yes we use those in bulk) and Clorox wipes. My Costco visits are less dramatic these days. We still attract some attention. The Vitamix lady knows us well. hehe But at least I’m not sore after shopping!
One of the items we always purchase from Costco is grapes! This is a great way to use those large cartons of grapes, frankly, you won’t be able to stop eating them when they’re prepared like this! The cream mixture has just the right amount of sweetness which means that adding the brown sugar and pecans just compliments the textures and flavors. Serve it cold. You can prepare the grapes with the cream ahead of time, but adding the brown sugar and pecans just before eating is recommended. You don’t want those pecans to become soggy. Serve all green grapes for a St. Patty’s Day treat! It’s also pretty to serve in a clear trifle bowl for a crowd instead of individual bowls.
Ingredients
- 1 lb green seedless grapes
- 1 lb red seedless grapes
- 4 oz sour cream
- 4 oz cream cheese, softened
- 1/4 C sugar
- 1/2 tsp vanilla extract
- 1 C brown sugar
- 1 C pecan pieces, lightly toasted
Instructions
- With an electric mixer, combine cream cheese, sour cream, sugar and vanilla. Whip until no lumps seen.
- Wash grapes and pat dry. In large bowl, fold cream into grapes. Place in refrigerator until ready to serve.
- Set oven to 425 degrees. Place pecan pieces on baking sheet. Place pecans in middle of rack for 2 minutes. Watch carefully! DO NOT BURN! You want them in just long enough to become a little crispy. Let cool.
- Place topping no more than 1 hour before eating salad.
