Coconut Banana Bread with Lime Glaze

This banana bread recipe is like no other I have ever tasted! It is sweet and moist on the inside with a tangy deliciousness drizzled on the outside.  You may never want to  try another banana bread recipe again. I know I haven’t!  Coconut Banana Bread with Lime Glaze It’s what you don’t see in this picture that really defines just how yummy this banana bread is… the 4 crying, salivating, desperate to eat children circled around the table asking a million times if I’m done taking pictures YET??? No, they’re not starving, just anxious to eat “the BEST” banana bread as they call it. I don’t think they’ve ever had plain banana bread, this IS the recipe I always make because I just can’t bring myself to try another one. We have a very monogamous relationship, this banana bread and I. I have been faithful ever since my first bite.  Coconut Banana Bread with Lime Glaze

Coconut Banana Bread with Lime Glaze

Ingredients

  • 2 C flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 C sugar
  • 1/4 C real butter, softened
  • 2 eggs
  • 3-4 mashed bananas
  • 1/4 C sour cream or plain yogurt
  • 3 T apple juice or milk
  • 1 tsp vanilla extract
  • 1/2 C + 3 T coconut, divided
  • 1/2 C powdered sugar
  • 1 1/2 T fresh lime juice

Instructions

  1. Preheat oven to 350 degrees.
  2. Whisk flour, baking soda and salt together. Set aside.
  3. With electric mixer, beat butter and sugar until well blended. Add eggs and beat to combine.
  4. Add banana, sour cream (or yogurt), apple juice (or milk) and vanilla. Beat until mixed well. Add flour mixture and beat until combined.
  5. Stir in 1/2 cup coconut.
  6. Pour into greased loaf pan and sprinkle with 3 T additional coconut on top.
  7. Bake in oven for 1 hour or until knife comes out clean. If additional time is needed, cover with foil to prevent coconut from burning.
  8. When done, cool for about 10 minutes before removing from pan. Whisk powered sugar and lime juice together. Add additional powered sugar for a thicker glaze if desired. Drizzle glaze on top of bread. Let glaze cool and set before slicing.

My name is Crystal Dangerfield and I am so excited to bring you tried and true recipes that my whole family and I enjoy together. I love being in the kitchen and trying new recipes. Of course we have our favorites, but my kids are pretty good sports about trying new things. I refuse to buy ready-made frozen meals and refrain from fast food. My kids do not know what a “happy meal” is and I want to keep it that way!
