Chocolate Eclair Dessert Cake is a no-bake, soft, rich and creamy deliciousness that is a definite crowd pleaser! I mean who doesn’t like eclairs?
My oldest daughter just turned 9 this month. Having a Summer birthday is always a challenge when it comes to having friends in town to celebrate with. This Summer was no exception. Sooo I decided to make her birthday one of the most memorable yet! Ha!
Since I have been popping out babies or breast-feeding for literally the last 10 years (that is no exaggeration) we have not been brave enough to travel with an infant and our other monkeys in tow. I decided just 2 weeks before her special day that I would make her wish come true of flying on a plane for the first time, but that wouldn’t be all! I kept the whole trip a secret until the morning of our trip. I woke her up at 6:30 in the morning and whispered in her ear, “Haylie, do you want to fly with Mommy to North Carolina on a plane with me today?”. She instantly lifted her head up and said “YES!”. I had already packed her things the night before, so we got dressed and off we went. Unfortunately, we had to break the news to my younger ones that we were leaving on a mommy/daughter trip for a WEEK. I assured them they would all have a chance to go on a trip with mommy or daddy as a birthday gift too when they turned 9. They instantly started thinking of where they wanted to go.
So, after the excitement of take-off I told her of all the exciting things I had planned for us to do. Since she is my adventure child so I had to go BIG! We went white water rafting, zip lining, upside down roller coastering, water sliding, fishing, boating, tubing and of course pedicuring. We stayed with family and friends and soaked up lots of 1:1 cuddle time just her and I. It was seriously an amazing trip filled with so many firsts for the both us. I can’t say I ever want to go white water rafting again… after getting tossed out of the raft and ending up down stream, I really appreciated the calm Florida beaches a lot more. Raging cold water with big rocks and a guide yelling at you to ROW is not my idea of fun anymore. I can say I did it, I survived it and I don’t want to do it again. Did I mention my daughter never fell out of the raft?! Totally not fair. She, of course, LOVED it
This eclair dessert is the perfect dessert for any occasion. It’s no-bake which makes prep easy. And what a crowd pleaser this is! As soon as you say eclair, people will instantly be sold. Be sure to prepare it ahead of time as you want the graham crackers to have time to soften.
Ingredients
- 1 box honey graham crackers
- 2 packages 3.4 oz instant vanilla pudding mix
- 3 C milk
- 1 8 oz tub Cool Whip
- 2 squares unsweetened chocolate
- 3 T butter
- 2 T Karo Syrup (clear, not dark)
- 1 tsp vanilla
- 1 1/2 C powdered sugar
- 3 T milk
Instructions
- Mix together dry pudding mix and milk. Fold in Cool Whip.
- Layer graham crackers at the bottom of a 9x13 dish. Pour 1/2 of the pudding mixture on top of the graham crackers. Place another layer on graham crackers on top and pour remaining pudding over crackers. Top with a 3rd layer of graham crackers.
- In a medium sized bowl, melt butter and chocolate squares in microwave. Stir until smooth. Add Karo syrup, vanilla and milk and mix well. Whisk powdered sugar into chocolate mixture slowly until smooth. Pour icing on top of graham crackers and spread evenly.
- Place in refrigerator for at least 6 hours, best if it sets overnight before serving.
