This Chicken & Apple Sausage With Sun-Dried Tomato Cream Sauce is da bomb! If you think those Granny Smith Apples are just for your apple pie…think again! It adds that extra apple flavor to your dish bringing out the, already delicious, chicken apple sausage.
A Costco trip is always a highlight in our day for anyone in our family. Who doesn’t love taste testing all the delicious food they offer? One of our favorite things we’ve ever taste tested are the all-natural sausages they offer. They come in a variety of flavors, each of us having our own favorite. However, this Chicken & Apple Sausage is a crowd pleaser for us all. I made this dish last year and liked it… then made it again this year, making some changes and LOVED it. My kids loved it too and even had seconds. And can I tell you, NO ONE knew I chopped up a Granny Smith Apple and threw it in? There was no weird texture, just a delicious essence of apple to each bite. They thought it was just from the sausage, but they were wrong! Combined with the sun-dried tomato cream sauce, this dish is the perfect Fall dinner!
Did I mention this recipe is a one pot meal!? Even more reason to make it on a weeknight! Perfect for a busy night.
Here’s the sausage I used. It’s gluten-free, nitrite free, free of antibiotics and guilt free too. An item you can feel good about feeding your family.
Ingredients
- drizzle of olive oil
- 1 lb Chicken & Apple Sausage, sliced
- 1 large sweet onion, chopped
- 2 cloves garlic, minced
- 1 granny smith apple, chopped
- 2 C chicken broth or stock
- 1 14.5oz can chopped tomatoes
- 1/2 C heavy cream
- 1/2 C sun-dried tomatoes, julienned
- 10 oz pasta or GF pasta
- 1 C Monterey Jack Cheese, shredded
- 1/4 C green onions, sliced for garnish
Instructions
- In large skillet, add olive oil to medium high heat. Add onions, sausage and apples. Cook for few minutes and then add garlic.
- Add chicken broth, canned tomatoes, cream, pasta, salt and pepper. Stir to combine. Bring to a boil and then reduce heat to low. Add sun-dried tomatoes, stir and cover until pasta is al dente.
- Turn off heat and add 1/2 C cheese and combine. Sprinkle remaining 1/2 C to top of pasta and allow to melt. Garnish with chopped green onions.
