This Caribbean Shrimp with Coconut-Lime Rice, Mango Salsa and Tostones is an absolute dynamite meal! It’s made up of creamy coconut brown rice that’s sprinkled with lime zest, sweet and juicy mango salsa, crunchy tostones topped with sea salt and tender shrimp tossed in Caribbean spices that make this dish explode with flavor. This is restaurant quality food that can be made in your very own kitchen! Your family will be blown away when they taste this meal… and so will you!
It’s Summer time, officially! Yay!! We spent this last week attending multiple end-of-the-year class parties, Honor Roll assemblies, Father’s Day bowling with the preschool, preschool graduation and celebratory pool parties with friends and family. It was a busy week to end the school year to say the least. I am soooo looking forward to sleeping in to 7:30 in the morning and easing my way into the day instead of the hit the ground running kinda situation.
A few years ago I bought 5 Dr. Seuss books titled “Oh, the Places You’ll Go” for each of my 5 children. At the end of the school year I have their teacher write a message to them, on a page of their choice, that will be read by him or her on the day of their high school graduation. I secretly get the books to the teacher through their mailbox at school and pick it up from the front office when they are ready. My goal is for the kids never to see the books. They’re nosy (like their mother) and would totally read them. Elementary School is easy now since they only have 1 teacher, but come middle school and high school perhaps I’ll just pick their favorite teachers to sign the book. We’ll see how it goes. Whatever pans out, I’m sure it’ll be a super special moment to read the messages of past teachers who have helped shape them and teach them. I can’t wait to sit down and read with each child the loving words of encouragement from each teacher! It will be such a tender moment.
My other tradition every year… making a banner for the kids to run through when they get home from their last day. It’s a fun one! I highly recommend it.
