I dare you not to close your eyes and go to your happy place when you experience this cake for the first time. It is so heavenly you WILL hear the angles sing!! A moist banana cake topped with toasted pecans and a sweet buttery frosting will take you there.
My husband and I celebrated our 12 year wedding anniversary this month. My mom and dad were kind enough to take on the load of all 5 kids for a night so we could spend some much needed time alone. We made reservations at a bed and breakfast here in Ft Lauderdale and started off the night by having dinner outside looking out onto the intercoastal. It was so quiet. We had no one to reprimand, no one to take to the restroom, no diapers to change, no drinks falling on our laps, no baby constantly trying to stand up in her highchair or have to give any reminders of not eating like an canine. It was just peaceful. Meanwhile, back at home, my parents were dealing with homework, baths, bedtime, kitchen duty and exhaustion… getting a little taste of our daily routine. I did try to make things easier by making dinner for them before we left, ironing school clothes for the next day and having their lunches packed. I knew they would still feel like they were hit by a train (or maybe 5 trains) by the time they left.
After dinner we went back to our room and…well… SLEPT!!! We fell asleep at 9:30 and woke up the next morning without having any interruptions!!! Hallelujah!!! We slept for twelve hours straight, woke up in time for breakfast in bed and then it was time to check out. Yep. We are party animals!! That is what 5 kids and 12 years of marriage will do to you. It will make you PAY for sleep.
This butter pecan banana cake is absolutely incredible!! No lie. It will wake up your taste buds and make you experience the flavor of bananas like never before. The whole cake is easy to prepare. Using a cake mix as your base and then mixing up your frosting to
drizzle dump on top is almost too easy for the level of deliciousness this cake has!! Seriously people, I have not served this to anyone that has not closed their eyes, dropped their shoulders, moaned and savored every bite of this cake. It is memorable.
