Take a look at these beauties! Purple, white and orange carrots are a fun and beautiful way to serve everyone’s favorite vegetable. Don’t be fooled by the color, they taste just like the orange ones you are used to eating. They make a gorgeous presentation for the holidays!
We recently had a Trader Joe’s open here in South Florida and I was finally able to go check it out last week. When I saw these carrots I had to buy a couple of packs! I knew my kids would be so excited to see the different colors… and I was right. They could not wait for me to pack them in their lunch the next day to show their friends the cool carrots they were eating. You have to admit, they are pretty cool looking!
Roasting the carrots in the oven leaves them with a tender crunch and preserves the vitamins which boiling reduces. I don’t like my veggies really soft, if you’re the same then you’ll love roasting them too. Just toss your chopped carrots with white balsamic, warmed honey and olive oil then sprinkle generously with sea salt and bake for 25 minutes. They will be sweet and salty with a little hint of zip from the balsamic. Someone once described this recipe as veggie crack! They’re soooo good!
