Just as delicious as french toast, but without the mess, this Baked Coconut Toast has become my new favorite weekend indulgence. Underneath that crispy flaked coconut is a sweet and gooey layer that melts in your mouth and makes you reach for one more piece before you’re even done with the first. I admit, I’m double fisting EVERY time I make this recipe. No lie. Try it and you’ll see exactly what I’m talking about!
Lay out 12 pieces of bread on a baking sheet and preheat the oven to 350*. If your bread doesn’t fit perfectly on your baking sheet, no big deal. They can hang off a little.
Combine your ingredients and spoon on your wet mixture. Spread evenly over the entire piece of bread.
Bake for 15-18 minutes. Do not let the bread get too dark, you want that gooey layer under the toasted coconut! A LIGHT golden brown is what you’re going for.
Feel free to indulge! My husband kept finding me over the stove eating ANOTHER piece the first time I made this recipe. I could hardly stay away from it. I may or may not have found the strength to resist eating 6 pieces at a time. (definitely not)
