Baked Brie topped with Warm Raspberry CoulisThis recipe was given to me by my cousin Barbra. Many years ago, like 9 years ago, she hosted a baby shower for me when I was expecting my first little bundle. I can DISTINCTLY remember sitting on her couch talking to my friend Stephanie Black when she placed this masterpiece on her coffee table in front of us. After tasting the first bite, I KNEW I needed that recipe! I finally made it a point to have her write it down and give it to me. You know something has made an impression on you when you can still remember it 9 years later! Ha! It’s just as delicious as I remember it and waaaay more easy to prepare than I ever thought! Try it for your next gathering and watch it disappear!

Hmmmm, now if I can only just get her hunky blue-eyed firefight’n hubby to give me his KILLER key lime pie recipe… all will be right in the world.

Baked Brie and Warm Raspberry Coulis

Baked Brie with Warm Raspberry Coulis

Ingredients

  • 1 block of Brie
  • 1 C raspberry preserve (good brand)
  • 2-3 T light brown sugar
  • 1/2 C sliced almonds
  • 1 T butter
  • fresh raspberries for garnish, washed and dried
  • Peppridge Farm Golden Butter Butterfly Crackers or GF cracker

Instructions

  1. Preheat oven to 350 degrees.
  2. Unwrap Brie and place on cookie sheet. Bake for 20 minutes.
  3. While Brie is cooking, melt butter in saucepan and toast almonds in butter. Stir frequently. When almonds are a light golden brown, add raspberry preserve and brown sugar. Mix well.
  4. With a spatula, place Brie on serving plate or cake stand and top with warm mixture. Sprinkle with fresh raspberries. Using a sharp knife, make medium cut into one side of the Brie and serve immediately with crackers.

My name is Crystal Dangerfield and I am so excited to bring you tried and true recipes that my whole family and I enjoy together. I love being in the kitchen and trying new recipes. Of course we have our favorites, but my kids are pretty good sports about trying new things. I refuse to buy ready-made frozen meals and refrain from fast food. My kids do not know what a “happy meal” is and I want to keep it that way! My husband was diagnosed with Celiac’s Disease several years ago and I have had to learn how to alter recipes into gluten free versions that the whole family still loves.
