Apple Crisp Baked Brie

If you want an appetizer that comes together quickly and is absolutely DELICIOUS… then look no further! This warm Apple Crisp Baked Brie is perfect to serve this Fall for any occasion. Cinnamon covered apples, crunchy toasted pecans, sweet brown sugar and chewy old-fashioned oats smother melted baked Brie. Scoop it up with a salted cracker and it’s pure perfection. I promise this one WILL be gone in a heartbeat.

I’ve mentioned before that my husband is quite the craftsman. He likes doing projects around the house, especially if he gets to use his power tools. We’ve recently taken on a project that has become bigger than we both imagined. He is building a loft bed for our 4-year old daughter. It’s not just any loft bed, it’s gonna look like a house with shutters, a roof, windows, flower boxes and a picket fence. It’s going to be spectacular… at least in my mind it is! Ha! So far, he has the frame of the bed made with windows cut out and the trim completed for each window. I feel like it’s taking FOR. EVER. I just want it done. This is seriously the biggest project he has ever attempted and with 5 children that want to join him outside, climb up into the bed and just watch the magic happen in his workshop it’s pretty much going in slow motion. I’m grateful for a husband who has the ability to literally create these images that are in my brain. We always forget about the MOST difficult part… finding the time and patience to complete the project! Reality hits and I remember… Oh wait, I have to contain these 5 little monkeys while he builds the thing! It’s no small task. And did I mention that the other 4 children are totally jealous that their sister is getting a custom-made bed and are fully expecting that they will be next? Ummmm, not a chance.

Hot Apple Crisp Baked Brie

Chopped Apples for Baked BrieTo make this baked Brie, chop 1 Granny Smith apple into chunks.

BrieCombine oats, pecans, cinnamon, brown sugar, apples and butter. Toss until oats and pecans are coated evenly with butter. Pour on top of block of Brie.

Brie with oat crumble before bakingBake at 350 degrees for 25 minutes in oven-safe serving dish or cast iron skillet. Serve immediately with salted crackers.

Apple Crisp Baked Brie

Ingredients

  • 1 16-oz Brie cheese
  • 1 1/2 C old-fashioned oats
  • 1/2 C packed brown sugar
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 1/2 C raw pecans, chopped
  • 3/4 C unsalted butter, softened
  • 1 large red or green apple, chopped with skin
  • salted crackers

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray serving dish or cast iron skillet with cooking spray and place Brie in middle of dish.
  3. Mix oats, pecans, brown sugar, salt, cinnamon and apples together. Add butter and combine until everything is moist. Pour apple mixture on top of Brie and around sides.
  4. Bake for 25-30 minutes or until topping is golden brown. Serve hot with crackers.

Of course we have our favorites, but my kids are pretty good sports about trying new things. I refuse to buy ready-made frozen meals and refrain from fast food. My kids do not know what a “happy meal” is and I want to keep it that way! My husband was diagnosed with Celiac’s Disease several years ago and I have had to learn how to alter recipes into gluten free versions that the whole family still loves.
